Why does ground beef need to be fully cooked but you can eat a rare steak?

Because the interior of the beef is sealed away from contact with bacteria in the air, environment, or cooking equipment, harmful bacteria should not be present in the center. That means that even though the center of the meat remains rare, it is probably safe to eat.

Why steak doesn’t need to be cooked all the way?

Whole cuts of meat, like a beef steak or joint, carry bacteria just on the outside of the meat. Other meats, such as pork and poultry, can have bacteria all the way through the meat. When a whole cut of meat is minced or skewered, this moves any bacteria all the way through the meat.

“The reason for this is that bacteria (salmonella, E. coli and campylobacter, for example) live on the outside of meats — when you sear a steak, this kills the bacteria. If harmful bacteria is present in the middle of the burger which hasn’t been cooked it may survive and make you ill.

Why medium-rare is the best way to cook steak?

When you cook a steak to medium-rare the internal temperature is hot enough to allow excess moisture to escape through vapor or steam, keeping your steak juicy and flavorful. Medium or well-done steak not only exceeds the just right zone of protein balance, but it also causes moisture to evaporate from your meat.

A properly cooked medium rare steak isn’t a concern, but medium rare ground beef is. For this reason, the safest way to eat ground meat is to wait until it’s cooked all the way through and to its safe minimal internal cooking temperature.

IF USING A GRILL PAN: Heat a grill pan over high heat on top of the stove. Cook the burgers as for a grill, above. Cook beef burgers until golden brown and slightly charred on the second side, 4 minutes for medium rare (3 minutes if topping with cheese) or until cooked to desired degree of doneness.
