Which is best base for pizza?

Many pizza-making-pros will likely argue that bread flour is best for making homemade pizza. However, I rarely keep any flours in my pantry that are more exotic than all-purpose flour, so when I was working on this recipe I first and foremost made sure that it worked perfectly with regular old all-purpose flour.

What goes first on a pizza base?

Before pre-baking my pizza crust, I heat the oven with a pizza stone inside. If you don’t have a pizza stone you could use a baking tray (like a cookie sheet), turned upside down. I then sprinkle cornmeal on my pizza peel and place the crust on top, and then slide the crust onto the hot baking stone.

Hand-tossing a pizza tends to burst the air bubbles in the dough, so the hand-tossed crust has fewer bubbles and doesn’t rise as much as the crust of a pan pizza. Pan pizza crusts tend to be crunchier and more golden because the crust is essentially fried in oil in the oven.

The leading cause of a soggy or undercooked pizza tends to be due to the heat of your oven. Likewise, you may have added too many toppings or too much sauce which has prevented your pizza from developing a crispy texture.

Try dropping your oven temperature slightly or lowering your pizza a level or two on your oven rack. You can then bake for longer – try 4 minutes longer – and you should cook your dough through without burning the top.

Heat oven to 425°F. Spray cookie sheet with cooking spray; sprinkle with cornmeal. Unroll dough; place on cookie sheet. Starting at center,press out dough into 14×12-inch rectangle.
