Throw away any sprouts that are past their best-before date or that have lost their crispness, look wilted or smell musty.

They should not stink or go slimy. They should just sprout. Mung beans that turn mushy, stinky or slimy are usually dead and are rotting instead of sprouting. I sprout mung beans by rinsing them once a day and draining all the water off them.
