A: Nutrient content does change slightly as fruit ripens. The reason bananas get sweeter as they ripen is that their starch is broken down into sugar. When your body has to break down the starch itself (as it does when you eat a green banana), your blood sugar rises more slowly.

As the fruit ages or ripens it’s cell walls become weaker and start breaking down. This process results in releasing enzymes in the fruit. These enzymes accelerate the process of breaking down polysaccharide in the fruit into simple sugars like fructose, glucose, and sucrose. All these simple sugars are very sweet.

Climacteric fruits undergo a number of changes during fruit ripening. The major changes include fruit softening, sweetening, decreased bitterness, and colour change. These changes begin in an inner part of the fruit, the locule, which is the gel-like tissue surrounding the seeds.

The sweetness of a fruit is influenced by the quantity and composition of sugars. Higher contents of sugar in the fruit increases the sweetness of the fruit. For example, if one apple variety has higher contents of fructose and another variety has higher glucose, the former will taste sweeter.
