Which side of the canvas sheet Do you paint on?
It is okay to paint on both sides of the paper, but each will behave sides of the paper but you are right, each side will act slightly differently. As far as Arches is concerned, there is no real difference, both sides accept paint and water.
Do you paint the edge of the canvas?
