What is the difference between fermented and rotten?
The line between fermentation and rot is pretty thin. The only useful distinction between the two may be that rot produces something that tastes bad and fermentation produces something that tastes good.
How do you know if fermentation is bad?
A spoiled ferment will smell rancid, like rotting broccoli. A good ferment will have a pleasant sour smell. Note: If there’s Kahm Yeast present it may have a strong smell, but once scraped away it should have a pleasant sour smell if it’s not spoiled. A spoiled ferment may be slimy in texture.
Does fermenting mean rotting?
Fermentation is a biological reaction by yeast that digests sugar and starch and outputs alcohol, carbon dioxide, and vinegar. (Different strains of yeast give differing percentages of CO2, acetic acid, and alcohol.) Rot is decay caused by bacterial action and not yeast.
Does fermented food spoil?
Storing food that has already been fermented in the refrigerator or a root cellar significantly slows down the rate of fermentation. That’s why fermented foods can be stored for up to three months, or longer, without losing their quality and good taste.

Why is fermented food not spoiled?

Can everything be fermented?
You can ferment anything. Any fruit, any veggie, any protein and that’s pretty much the whole spectrum. For beginners, I recommend veggies to start. It’s the quickest, it’s the most familiar, and it’s the most rewarding.

How long do lacto-fermented foods last? Fermented foods that are properly prepared and stored in a cool, dark place (like the refrigerator) can last at least 4-18 months. Always look for any signs of mold, an even color throughout, and make sure it still looks edible.
Does fermentation smell bad?
If you haven’t yet forayed into fermented foods, then one thing might put you off it. The smell. Although bad smells from foods are usually a sign to stay away (or throw away!), as it normally signifies rotten food, intentionally fermented foods are a little different. They’re deliberately rotten.
