Direct adulteration of honey is commonly performed by the direct addition of a certain amount of sucrose syrup into the honey. The source of sucrose syrup could be sugar beet, HFCS, maltose syrup, or industrial sugar syrups (glucose and fructose) obtained from heat, enzyme, or acid treatment of starch [74].

–Vinegar Test: Mix a few drops of honey into vinegar water, if the mixture starts to foam, then your honey is fake. –The Heat Test: Honey remains unburned. To try the heat test, dip a matchstick in honey and light it. If it burns, then your honey is adulterated.

A recent report by Centre for Science and Environment (CSE) showed that only three honey brands – Saffola, MarkfedSohna and Nature’s Nectar – out of 13 passed the stringent NMR test for testing the purity of their product.

Is Indian honey adulterated?

An investigation in December 2020 by the CSE unravelled the ‘food fraud’. The finding revealed that 77\% of honey samples (17/22), which the CSE got tested in Indian and German laboratories, had failed the tests of purity and were found adulterated with sugar syrups. Only three out of 13 brands had passed all tests.

On 2 December 2020, the CSE revealed that it had chosen honey samples of 13 brands to undergo the NMR test at a German laboratory to check for purity. Only three brands passed the test and one of them was big brand Saffola Honey.
