The consumption of omega-6 polyunsaturated fatty acid (PUFA)-rich vegetable oils such as canola, soybean, sunflower, and corn oil has increased 1,000-fold since 1960, in part because these oils are believed to be healthier alternatives to saturated fats.

What is the major component of canola oil?

Canola oil is composed of 6\%–14\% α-linolenic acid, 50\%–65\% oleic acid, and < 7\% of saturated fatty acids (Ghazani & Marangoni, 2013; Gunstone, 2011). However, cold pressed canola oil contains a comparatively higher content of tocopherols (60–70 mg/100 g) and phytosterols.

Does canola oil have a high viscosity?

Saturated fatty acids have higher density than monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA). Viscosity is the relative thickness or resistance of the oil to flow. Refined canola oil has a higher viscosity than that of soybean oil.

Why are PUFA oils bad?

Oxidized PUFA can be dangerous when in our bodies, especially since oxidative damage to fat-containing LDL particles is a primary factor in the development of heart disease. And an omega-6 rich diet greatly increases oxidized LDL levels. The more PUFA we eat, the more that accumulates in our bodies’ adipose tissue.

Is castor oil a PUFA?

Oils are liquid at low temperatures and contain a higher percentage of unsaturated fatty acids. Oils come in two sub-types: monounsaturated (e.g. olive oil, avocado oil, castor oil) and polyunsaturated (e.g. canola oil, sunflower oil and flaxseed oil). The higher an oil is in PUFA, the more prone to oxidation it is.
