Can you cook sweet rice like rice?

Cooking sweet rice or glutinous rice is somewhat different than cooking regular rice. You need less water to cook it, which makes steaming a better option than a pot of simmering water. All you need is a large, deep pot with a lid, an empty tuna can (or a steaming rack if you have it), and a heat-proof dish.

What makes Thai black rice black?

The dark color of black rice comes from a high level of the antioxidant, anthocyanin which is also responsible for the deep color of eggplant, blueberries, Concord grapes, and blood oranges. Actually the bran hull (outermost layer) of black rice contains one of the highest levels of anthocyanins found in any food.

Why do you have to soak sweet rice?

Glutinous describes the rice’s level of amylopectin, a water-soluble component of starch. To ensure the grains cook and absorb moisture evenly, sticky rice first needs to be soaked and rinsed in water before cooking. Once steamed, the grains of glutinous rice become tender but maintain a distinct chewiness.

Is sticky rice the same as sweet rice?

Also known as “sweet rice” or glutinous rice (though it’s gluten free), sticky rice is a large white grain that becomes translucent, shiny and extremely sticky when steamed. Sticky rice is a staple in Laos, where it is especially beloved, but it has ardent fans throughout Asia.

How long do you cook black rice?

30 to 35 minutes
Bring to a boil over medium-high heat. Cover, reduce the heat to low, and simmer until the rice is chewy-tender and almost all of the liquid is absorbed, 30 to 35 minutes. Remove from the heat and let stand, covered, for 10 minutes before fluffing and serving.

Can you soak sweet rice too long?

My experience with sticky rice is that if it sits for longer than 12 or so hours it starts to ferment (depending on how warm the environment). While ok to cook and eat it will probably just taste off.
