Why do bell peppers smell so strong?

In green peppers, a significant contributor to aroma is 2-methoxy-3-isobutylpyrazine, more commonly referred to as ‘bell pepper pyrazine’. This compound, as the name suggests, has an smell that is very characteristic of green peppers. Other compounds are present too, and make minor contributions to the pepper aroma.

The different colors of bell peppers actually do taste different. Green is the least ripe and the most bitter. The others are much sweeter, with red being the sweetest. Red is said to have the most nutrients and is one of the healthiest “vegetables” you can eat.
