Can you use potatoes that are wrinkled?

University of Illinois Extension recommends that soft, shriveled, or wrinkled potatoes with or without sprouts should not be eaten. Light causes the potato to produce chlorophyll and also solanine. Solanine has a bitter taste and is an irritant to the digestive system that can cause paralysis in large quantities.

How do you restore wrinkled potatoes?

If they’re starting to get a little wrinkled just because they’re old, but they aren’t getting rotten or moldy or anything of the sort, then sure. Wash them well, cut out any bad spots, and make mashed potatoes with them. Wrinkled potatoes tend to have softened a bit so that’s the best way to use them up.

Raw potatoes should be firm to the touch with tight skin that’s free of large bruises, black spots, or other blemishes. If a potato has become soft or mushy, you should throw it out. Though it’s normal for potatoes to smell earthy or nutty, a musty or moldy odor is a hallmark of spoilage.

Potatoes are safe to eat, even after they’ve sprouted, as long as they are still firm to the touch, don’t look too wrinkly and shriveled, and the sprouts are small. There are, however, toxin concerns with potato sprouts, so you need to remove the sprouts and ensure that the potato isn’t too far gone.
