Jets leave white trails, or contrails, in their wakes for the same reason you can sometimes see your breath. The hot, humid exhaust from jet engines mixes with the atmosphere, which at high altitude is of much lower vapor pressure and temperature than the exhaust gas.

A contrail will form if, as exhaust gases cool and mix with surrounding air, the humidity becomes high enough (or, equivalently, the air temperature becomes low enough) for liquid water condensation to occur. If sufficient humidity occurs in the exhaust plume, water con- denses on particles to form liquid droplets.
